  • 2 cups of Basmati rice
  • 1 medium onion
  • 2 medium potatoes
  • 4 medium tomatoes
  • 1 tablespoon of tomato paste
  • 1 teaspoon of turmeric
  • 1 teaspoon of salt
  • 25 grams of butter
  • ½ teaspoon of black pepper
  • 4 tablespoons of vegetable oil
Instructions
 
  • Our Dami Gojeh Farangi recipe begins with rinsing the rice under cold water until it runs clear. I recommend doing this in a bowl; it makes the whole process more manageable. Next, we’re going to finely chop a peeled onion and sauté it in two tablespoons of oil in a pot over heat. We’ll sauté this for about three minutes until it becomes translucent. No need for any color change.
  • Now, this is where our dish begins to gather its unique character. To the onion, we're going to add turmeric, salt, and black pepper. Give this a stir for a few more minutes to release those aromatic spices.
  • Next, peel and chop the potatoes into small cubes, about one or two centimeters in size. Rinse these under cold water to remove any excess starch. Now add two-thirds of the diced potatoes to the pot with the onions, saving the rest for later. Sauté this mixture until the potatoes get a little color.
  • Add tomato paste to your pot and stir it in until it loses its raw smell. Rinely chop the tomatoes and add them to the food processor to create a purée. Combine this with the rest of the ingredients in the pot.
  • Allow the tomato purée to simmer for about ten minutes. Then, introduce the rice to the pot and gently mix it in. Now, pour in a cup of boiling water and let the initial cooking of the rice begin. The rice is ready when it's tender on the outside but still firm on the inside.
  • In another pot, pour two tablespoons of oil and arrange the remaining potatoes at the bottom. Pour the rice and tomato mixture over the potatoes, shaping it like a dome.
  • Slice some butter and place it over the rice. Now, cover the pot and let it cook on low heat. To trap the steam and keep the moisture, cover the lid with a clean cloth before putting it on the pot. Wait for about 35 to 45 minutes, and voila! Your delicious Dami Gojeh Farangi is ready to serve.
