Ingredients

  • 3 medium-sized potatoes
  • 1 chicken breast
  • 3 eggs
  • 1 carrot
  • 4 tablespoons of canned green peas
  • 5 medium-sized Pickled cucumber
  • 2 spring onions
  • 4 tablespoons of mayonnaise
  • 1 tablespoon of mustard sauce
  • 2 tablespoons of lemon juice
  • ½ teaspoon of salt
  • ½ teaspoon of black pepper
Instructions

  • Begin with placing your chicken breast into a pot with a few cups of water. Bring it to a simmer and wait for the white froth to appear on top. Scoop out and discard this froth - it's a little secret to get rid of any unpleasant chicken taste.
  • Add your potatoes and carrot to the pot with the chicken. Allow them all to cook together until they're perfectly tender. This should take around 25 to 30 minutes. In the meantime, put your eggs in a separate pot of water and boil them for around 15 minutes.
  • Once everything is cooked and cooled, peel the potatoes, and then start chopping! Cut the chicken breast, carrot, and potatoes into small, one-centimeter cubes, and put them in a large bowl.
  • Next, peel and dice the eggs and add them to the bowl. Continue with dicing your pickles and adding them along with the canned green peas to the bowl.
  • Time for some gentle stirring to blend all those lovely ingredients together. For the dressing, finely chop the spring onions and mix them with mayonnaise, mustard sauce, lemon juice, salt, and black pepper in a small bowl.
  • Pour this delicious dressing over the salad ingredients and give everything a good mix to ensure all the elements are well coated with the sauce.
  • Cover your bowl and place it in the fridge for at least an hour. This step is vital as it allows the flavours to mingle and infuse into each other, creating a more delightful and balanced taste.
  • Optional: For those who enjoy a bit of herbaceous flavor, consider adding some dried dill. Simply mix it in with the dressing before adding it to the salad.
  • And voila! Your Russian Olivier Salad is ready to be served. Enjoy this hearty, nutritious meal that promises to be a hit with your family and friends. Bon Appétit!
