Today, I'm going to walk you through one of my personal favorites, the Persian Ground Chicken Kebab, also known as Kabab Koobideh Morgh. Trust me, once you've tried it, this recipe will be a cherished addition to your culinary repertoire!

Ingredients
  
  • 600 grams Boneless chicken breast
  • 2 large onions
  • 4 cloves of garlic
  • 50 grams butter
  • ½ teaspoon Coriander seed powder
  • ½ teaspoon ground black pepper
  • ½ teaspoon Turmeric powder
  • 1 teaspoon salt
  • 2 tablespoons bloomed saffron
  • 25 grams butter for bloomed saffron
Instructions
 
  • First things first, let's gather our ingredients. You'll need some chicken breasts, a large onion, a few cloves of garlic, and coriander seeds. And, of course, our trusty spices—salt, black pepper, and turmeric—for that mouth-watering flavour. Now, let's get down to business.
  • Start by placing the chicken breasts on a kitchen board. Carefully separate the bones from the meat and mince the breasts twice. Put the minced meat in a large bowl. Next, grate the onion, but here's a little secret: keep the extra onion water.
  • After adding the onion, it's time for the garlic. Peel and grate the garlic, then add it to the mix. Now, for the pièce de résistance - the spices! coriander seeds and sprinkle the salt, black pepper, and turmeric on the chicken. Knead the mixture well, ensuring the spices reach every part of the meat. Once done, cover the bowl with cellophane and let it rest in the refrigerator for 2 hours.
  • When your kabab mixture is well-rested, it's time to shape it. Lightly grease the bottom of a pan, then evenly spread the mixture onto it, giving your Chicken Koobideh Kababs a uniform shape. Put the pan on heat and let the magic happen. As the meat absorbs the water, it becomes cohesive and deliciously tender.
  • Now, let's get fancy with some saffron. Melt some butter in a small pan on low heat, then add the saffron. Use a knife to cut the meat into long slices, then gently flip the kebabs with a spatula and spoon. Brush the saffron butter mixture on the kababs, ensuring they don't dry out. Flip them again to coat the other side with this delightful concoction.
  • If you're up for a more traditional approach, you can also cook the kababs on charcoal. For this, you'll need wide skewers, like the Kabab Koobideh skewers. Knead the kabab mixture for at least 10 more minutes until it sticks well. If you're going the charcoal route, I suggest adding Instead of 50 grams of butter, use 100 grams of sheep's tail fat to the Chicken Koobideh kabab ingredients and grinding them again for an extra juicy result. Soak the your hands with onion juice, then skewer your kabab mixture.
  • Prepare the barbecue, ensuring all the charcoal is lit. Place the kabab skewers on the barbecue and let them cook. Remember to rotate them continuously for even cooking. You can also brush the kababs with the saffron butter mixture while they cook, adding an extra layer of flavour.
  • So there you have it, friends: a step-by-step guide to making the most delicious Persian ground chicken kebab.
